Durbanville Hills Sauvignon Blanc

Durbanville Hills Merlot

A full-bodied, mouth-filling wine with concentrated raspberry, cigar box, cinnamon and mint chocolate aromas and well integrated wood. Serve with tuna, salmon, Mediterranean vegetable ragout on a bed of polenta and lamb with black olives and fresh thyme.

Durbanville Hills Sparkling Sauvignon Blanc

Our maiden Sauvignon Blanc Sparkling Wine consists of 100% Sauvignon Blanc grapes which were hand-harvested in the early morning at 22.5-23.5°B. At the cellar the grapes are de-stemmed into 15 ton separators and the free run juice is separated from the skins, left overnight to settle and then racked to the fermentation tank. Here it is inoculated with a selected yeast strain and fermented at 15°C, which takes between 14 and 23 days. After fermentation the wine is racked from its primary lees.

Durbanville Hills Chenin Blanc

The grapes where harvested at optimum ripeness when the balance between fruit, sugar and acid was perfectly in balance. The grapes where gently crushed with minimal skin contact before the juice was separated from the skins. The juice was cold settled for 24 hours before it was racked from its primary lees and a percentage of the light lees was added again for further complexity. The juice was inoculated with a selected yeast strain to capture the fruity aromas, and fermentation took place at 13 - 15°C for 16 days. Thereafter it was racked from the primary fermentation lees and allowed to mature for another three months on its fresh lees to create a wine with a fuller mouth feel.

Durbanville Hills Chardonnay

The grapes for this wine were sourced from vineyards located mostly in the lower Durbanville foothills on the southern slopes, some 250 metres above sea level and grown in dark red soils. The vineyards, yielding around 9 tons per hectare, were harvested from mid to late February between 23° and 25° Balling, when the grapes were showing ripe, yellow colours.

Refreshing and light-bodied with raspberries, red cherries, strawberries and berry compote aromas. Enjoy on its own or served with baked ham with a berry glaze, chunky fish soups and stews, antipasti, mildly dressed salads and Peking duck.

Durbanville Hills Cabernet Sauvignon

A full-bodied wine with concentrated dark berry fruit, sweet spice, velvety tannins and exceptional wood structure. Enjoy served with plainly-grilled lazy-aged steak, Chateaubriand, roast lamb with rosemary or thyme, and Cheddar and Emmenthal cheese.

Elegant and full-bodied with aromas of pepper, vanilla, spice, cigar box combine with soft tannins, well integrated wood and a mouth-watering finish. Serve with beef in a peanut, coconut and chilli sauce, Moroccan lamb, barbequed tuna steaks or kudu fillet and chilli con carne.
